Slow-Roasted Heritage Carrots with Tahini & Pomegranate

There's a particular kind of magic in roasting carrots slowly. The natural sugars concentrate, the edges caramelize into something almost candy-like, and the humble root vegetable becomes something genuinely beautiful on the plate.

This recipe does very little to the carrots themselves — and that's the point. Good tahini, bright pomegranate seeds, a scattering of herbs. The cooking does the work.

Ingredients

  • 2 pounds heritage carrots (mixed colors if available), scrubbed, tops trimmed to 1 inch
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon cumin seeds
  • Flaky sea salt and black pepper
  • 1/4 cup tahini, well-stirred
  • 2 tablespoons lemon juice
  • 1 tablespoon warm water
  • 1/2 cup pomegranate seeds
  • Fresh dill and mint leaves
  • Good honey, for drizzling

Instructions

  1. Preheat oven to 375°F. Toss carrots with olive oil, cumin seeds, salt, and pepper on a rimmed baking sheet. Arrange in a single layer.
  2. Roast until deeply caramelized and tender when pierced with a knife, 35–45 minutes, turning once halfway through.
  3. While carrots roast, whisk tahini with lemon juice, warm water, and a pinch of salt until smooth and pourable. Add more water if needed.
  4. Arrange carrots on a serving platter. Drizzle with tahini sauce, scatter pomegranate seeds and herbs over the top. Finish with honey and flaky salt.

Cook's Note: Don't crowd the pan. The carrots need space to roast, not steam. If you're doubling the recipe, use two sheet pans.
